Beat the Summer Heat with Philly Swirl Treats

   Hello July! Are you enjoying your summer temperatures already? Just this week, we started with a 107F here in New Jersey. With the high temperatures and humidity, there's no more denying that the peak of summer is here.

   Speaking of hot weather, one of the most common questions I get this season from fellow food allergy parents is what type of frozen treats to I give my kids. Well, here it is --- Philly Swirl.


 
     Philly Swirl has been my food allergy kids' best friend for years. I can still remember the first time we discovered these colorful treats. While I was reading the labels of non dairy milk cartons, one of my boys who's looking through the glass case of frozen novelties said "I wish I could have ice pops again." Without even thinking, I asked and they replied,

"Is it gluten free? Yes!
"Dairy free?"        Yes!
"Nut free?"           Yes!
"Soy free?"           Yes!
"Egg free?"          Yes!

Are you sure? .... Yes!

   I got really curious and headed their way. Can this be really true? Then after a thorough examination of the ingredient list, I gave in and grabbed a box of the Swirl Stix. The rest is history.

     So, what makes Philly Swirl a big hit in our family? Well, aside from being food allergy friendly, these frozen treats are packed with flavor. Since each is made by combining two or even three types of Italian ices that go well together, one can expect a variety of flavor punch in each bite or scoop.



    Child#1 and I are crazy over the Orange Dream as it reminds us of a Creamsicle. Child#2 loves the Cotton Candy and Mystery flavor. The Dad (yup, he likes these a lot because it's also fat free) enjoys the sour notes of Very Berry and Applelicious. As for the two boys, well, they like them all!

     Another thing that we love about the Swirl Stix, Swirl Cups and Swirl Poppers is its smooth and almost creamy texture. While most ices and ice pops get really hard and actually turn into solid ice, these Philly Swirls remain smooth and silky. No breaking of teeth or plastic spoons here.

Rebecca's Gluten Free Cookie Mixes Giveaway

    I can't believe the school year is almost over. One more week and the kids will be home bound. You know what that means right? New routine, new activities and yes, time to make more memories.  
   With the nicer weather, I'm sure you wouldn't want to spend hours in the kitchen cooking for our always hungry children. Is it only me or have you noticed that the young ones tend to consume more food when they are home? 

     Anyway, since most of us who are managing food allergies have no choice but to make most of our food from scratch, I'm sure you will be very excited with my latest product find.

      Rebecca's Gluten Free is a California based company that specializes in easy and delicious gluten free and vegan mixes. Currently, their signature items are their cookie mixes. It which available in these well loved flavors:
  • Snicker Doodle
  • Chocolate Crinkle

  • Lemon Sugar
  • Pumpkin Spice
(Just a quick note: The product has a note that mentions it is processed in a facility that may contain peanuts and tree nuts.)

        What makes Rebecca's Gluten Free cookie mixes different from most gluten free mixes out there is their "super easy" promise. That means we don't need to add more than 3 ingredients to make delicious cookies. Sounds good right?



     For this review, I was sent a free Snicker Doodle cookie mix. Originally, the packaged asked for just one egg and 8 Tbs. of butter to add to the mix. Since my children can't have both, I decided to make a Flax goo (egg substitute) and Earth Balance Soy free Buttery spread. 

     With the help of my trusty electric mixer, I creamed the flax goo and buttery spread before I slowly added the cookie mix. The mixture was a bit crumbly at first but after a minute or two of mixing, it slowly came together nicely. 
     


      To make the cookies almost the same size, I used a small ice cream scoop. Then I rolled the dough into balls. Finally I coat each ball with the cinnamon sugar that was also include included in the mix. The mix gave me 26 pieces of 2 inch cookies.  Not bad for $6.99 a pack.  



     
     The end product!  As you can see, the cookies turned out nicely brown. Though it took a little longer to bake (I added 5 minutes to the suggested baking time.), the wait was definitely worth it. Not only are the cookies food allergy friendly and yummy, these without a doubt are the fastest ones to make. 

     It was given 4 thumbs up by the kids. They even emphasized that these cookies tasted like the ones they used to have (pre food allergy diagnosis). My husband and I agreed that Rebecca's Gluten Free Cookies are not only delicious but it can actually give the regular ones (egg, milk and wheat laden ones) a run for their money.  

    Taste and texture wise, no one can tell that these are gluten free and even vegan (I made substitutions remember?)

Quinoa Puffs - A Tasty Snack made Healthier

     One of my guilty pleasures is snacking on those round cheesy puff treats that come in that gigantic plastic tubs. You know what I'm talking about right?

    Before we found out that the kids have food allergies, I confess I used to buy a container every two months. Though generally, we were healthy eaters, back then, that treat was something our whole family looks forward to whenever we have our weekly movie night. Those airy, crunchy and salty snack is so comforting and yes, highly addicting too. Personally, a bowl isn't enough for me.  

    Anyway, those bright orange balls which happens to be a regular on summer gatherings, have always been included in Child #2 and Child #3's wish list. In fact, they often say that it is the first food they will eat once they outgrew their allergies. Really? 

    For years now, I have been looking for a product that will satisfy our family's craving for this childhood comfort snack. Then, with a stroke of luck, I was approached to try a new product called Quinoa Puffs by I Heart Keenwah.  



      What are Quinoa Puffs? Well, basically they are light, airy and crunchy balls (just like the cheese puffs we've used to have as a child). The major difference is that these Quinoa puffs do not contain any artificial colors or flavors and are even loaded with 5 grams of protein. It's basic ingredients are:
  • quinoa flour
  • brown rice flour
  • white rice flour
  • pea protein concentrate
  • baking powder
  • sunflower oil
  • all natural seasonings
(TFM Allergy Alert! The Aged Cheddar flavor contains dairy. There's a notice in the package that indicates that the products were manufactured in a facility that also processes soy, dairy and tree nuts.) 
  
  It comes in 4 savory flavors such as Sea Salt Truffle, Herbs de Provence (Child #2 and #3's favorite), Sweet Chili (husband's fave) and Aged Cheddar (Child #1 and #4's favorite). All varieties are Gluten Free, Kosher and Soy Free. Except for the Aged Cheddar flavor, the rest are also Vegan, Dairy Free and NON Gmo Verified. Does that sound great? 

     As for the taste, each variety is packed with distinct and yummy flavors. All the kids enjoyed the Sea Salt Truffle and Herbs de Provence. They like the Sweet Chili as well but the punch from the jalapeno and habanero peppers was a bit too much for their taste buds. My husband and I loved it though. As for the Aged Cheddar (tried by the two non food allergy kids), they both agreed it's like the regular cheese puffs but is less salty. Yes, this cheese puff loving mom agrees as well.

Easy Gluten Free Corn Dog Muffins

   Last week, while the kids and I were talking about the coming fair in our town, Child#2 and Child#3 both made a wish.  Both were hoping they could eat a corn dog just like their other siblings.  Yes, my eldest and youngest recently outgrew their allergies and both were to order corn dogs when we eat out.   

    As a food allergy mom, simple requests such this always pinch my heart. No matter how many years we've managed their food restrictions without any complains, hearing them long for something especially food makes me really uncomfortable. If I only knew how to make their allergies go away.  

     Then with some divine intervention, a packaged containing a GF Jules corn bread mix arrived in my house.  It was a prize I won in one of Vegetarian Momma's giveaway I entered in months ago. What a coincident right? 



     Since I haven't really tried making my own corn dogs on a stick, I asked the kids if they would be interested to try a Corn Dog in the shape of a muffin.  To my surprise, they were all excited with the idea.  They just reminded me of the two things that are important to them --- taste and the surprise in the middle.  

     Without any coercing, I gathered all my ingredients and said a quick prayer to make sure that the end result will turn out good.  After carefully preparing the batter and making sure I totally covered the kielbasa slices, I crossed my fingers while I waited for it to bake.  

   The final product as you can see below is beautiful. Though it's not as brown or yellow as most corn breads are, the muffins were very moist and delicious. Even if the sausage in the middle gave off some of its juices, it didn't make the inside soggy.  In fact, it made it more flavorful.  

     It was really a fun and yummy experiment. Thank you GF Jules and Vegetarian Momma for making it easier for this mom.  As you may have already known, the kids' smiles brought by these simple treats are indeed priceless.

Ingredients:

1 box GF Jules Gluten Free Corn Bread Mix
2 6 oz. containers So Delicious Coconut Yogurt (vanilla flavor)
1/2 cup So Delicious Coconut Milk (sweetened vanilla)
1/2 Harvestland Polish Pork Kielbasa
1 Tbs. flax meal
3 Tbs. lukewarm water

Optional toppings:
1/4 cup Daiya Cheddar style shreds
2 Tbs. Earth Balance Buttery Spread (soy free for us)


1. Fill a saute pan with 2 cups of water.  Add the kielbasa and bring the water to a boil. Then let it simmer for 10 minutes. Take off from heat and set aside.
2. While heating the kielbasa, preheat the oven to 400 F. Line about 15 muffin crevices with either silicone cups or paper liners.
3. In a small bowl, combine the flax meal and water to make a goo. Set aside for at least 5 minutes before using.
4. In a big bowl, with the help of a fork, whisk together the yogurt and flax goo until well incorporated.
5. Add the corn bread mix.
6. Slowly add the coconut milk. Mix well with a fork.  If the batter seems too thick add more coconut milk, 1 tablespoon at a time until the batter is smooth.
7. Fill the prepared muffin tins with the batter.  Make sure it each is just half full.
8. Cut the kielbasa into 1 inch thick circles.
9. Place one slice of kielbasa in the middle of each muffin.  Make sure that the meat is completely covered by the batter.
10. Bake in the oven for 20- 22 minutes
11. Remove from the oven and cool for a few minutes before serving.  The inside will be very hot.

Gluten Free Taco Pizza To the Rescue

      "How do you do it?  I mean making food from scratch everyday."  If a can get a dollar every time I'm asked with this, I bet I'll have a brand new outfit complete with matching shoes and bag every month. (Hmm... That's not a bad idea.)

     Well, here's a confession.  Even though I enjoy cooking and baking, there are days when I totally don't feel like doing anything in the kitchen. Yes, there are times when I would rather fold the kids' clothes than turn on the stove. FYI, laundry is always the last in my to do list.  

    Since calling the local pizzeria and Chinese delivery is no longer an option for us, I have no choice but to produce something for my ever hungry children.  That's when I rely on some packaged staples in my pantry.   

      One of the products, I try to have on hand is Schar's Gluten Free Pizza Crust.  Each box contains 2 crusts which are already at room temperature.  Such a time saver. With my children's appetite, a pizza dinner means two pies!

      Just a little heads up to all my multiple food allergy people. Schar's Gluten Free Pizza Crusts are made with water, corn starch, potato starch, rice flour, sunflower oil, rice starch, rice syrup, dextrose, psyllium seed husks (vegetable fiber), modified cellulose, guar gum, apple fiber, yeast, salt and tartaric acid.  (The ingredient list found in on the box).  Though it contains no soy, there is a statement indicating that it "May Contain Soy". 

       I don't know about your comfort level when it comes to those label warnings.  That's why, I am disclosing this.  In my experience though with this brand,  Child #2 and Child#3 who both have soy allergy were able to eat it without any issues.  Since every situation and child is different, I suggest you trust your instincts.  If you're not comfortable, using this ready made crust, you surely can make your own.  Here's one of my favorite Top 8 allergen free Pizza crust recipe.  

       Either you are using a homemade or ready made crust, this Taco Pizza is kid approved and still easy to make.  Here's another secret.  I usually make a big batch of Taco Meat.  Then I'll put it in quarter size freezer bags and store it in the freezer.  A nice back up for my lazy cooking days.  

       As long as you have the staples on hand, you can readily make this yummy pizza in minutes. If you only knew how many times this came in to my rescue.

Ingredients:

1 pc. Schar Gluten Free pizza crust
1/2 lb. ground beef or turkey
2 tsp (or more) Taco Seasoning
1/3 cup shredded cheese (in our case Daiya cheddar style)
1/4 cup guacamole
1 tsp. melted butter
pinch of garlic powder

Optional toppings:
     shredded lettuce
     chopped tomatoes
     hot pepper slices
     crushed corn chips


1. Preheat the oven to 410 F.  Line a baking sheet with parchment paper.
2. In a heated pan, brown the ground beef or turkey.  Once the meat is almost cooked, add the taco seasoning and mix well.
3. Transfer the cooked taco meat in a platter and set aside.
4. Place the pizza crust on the prepared baking sheet.
5. Brush whole the pizza crust with melted butter and sprinkle the garlic powder. Make sure the edge has some garlic powder too.
6. Spread the cooked taco meat on the crust.
7. Sprinkle cheese on top of the meat.
8. Bake in the oven for 11-12 minutes.
9. Remove from the oven.
10. Top with guacamole and other toppings you like. Serve hot.

Food Babe's White Bean Chili

        Have you read The Food Babe Way by Vani Hari?  For those who are not familiar with Vani, she is the creator of the highly successful blog called Food Babe. With a mission to expose the unhealthy ingredients in common, well loved brands such as Subway and Kraft, this passionate health advocate is both loved and highly criticized by the industry.

      I came across Vani's blog early last year while I was doing some research regarding the hidden toxins found it food.  At that time, she just exposed one of the ingredients found in Subway's bread.  Though my children were not eating from the chain restaurant anymore due to their food allergies, I was still appalled to learn that even brands that market themselves as healthy are still using unnecessarily additives on their products.  For someone who's been really keen about what my family eats, I'm glad that there's someone who's willing to take the time to tackle this enlightening as well as controversial issue.

      The food allergy community I am in has mixed feelings towards The Food Babe. In one of her articles for instance, she advised her readers to "tell their food servers that they have food allergies to make sure that their order will come out as what they liked".  For someone with two children who are high risk for anaphylaxis and yes, a real pain in the butt when we eat at restaurants, that type of statement has a big impact on me.   What if the a food server read that and didn't take my food requests seriously? 

         Aside from that incident, I have to say, I still visit her blog once in a while.  After all, she does provide topics that are interesting and practical tips.  So, when I was contacted to preview her new book, I grabbed the opportunity.   

         If you are into healthy eating, I suggest you'll take the time to read The Food Babe Way .  The first part of the book contains a list of ingredients that are may cause harmful effects to the body.  For a label reader and food allergy mom such as myself, this is really handy to have on hand.

         The second part contains her tips on losing weight and having more energy.  This includes a day by day guide on forming healthier habits.  She also included some easy to make recipes such as the White Bean Chili below.  This gluten, dairy, nut, egg and soy free recipe is not only safe for my kids to eat, they actually liked it.          
           

           

      To sum up, I actually enjoyed reading the The Food Babe Way.  Even though she's not a scientist, she gave very interesting information that we can check out ourselves.  It was written in such a way that will make us think and pay more attention to our food before we eat.

Food Babe's White Bean Chili Recipe


Ingredients:

2 Tbs. olive oil
1 medium onion, diced
1 red bell pepper, diced
1 medium carrot, diced
5 cloves garlic, minced
1 tsp. smoked paprika
dash of cayenne pepper
1/2 tsp. cinnamon
1 tsp. cumin
1 tsp. turmeric
8 large tomatoes, diced or 14-18 oz can diced tomatoes
2 15 oz. cans chick peas, rinsed and drained
4 cups vegetable broth
sea salt and freshly ground pepper
1 medium zucchini, diced

1. Heat the olive oil over medium heat in a large soup pot.
2. Add the onion, bell pepper, carrot, and garlic and saute until the vegetables are tender.
3. Add the spices and cook for one minute.
4. Add the tomatoes, chick peas and vegetable broth and bring to a boil.
    Season with sea salt and pepper.
5. Turn down the heat to a simmer and cook for about 20 minutes.  Add a little water if more liquid is needed.
6. Add the zucchini and cook for about 2-3 minutes more.  Serve hot; store leftovers in the refrigerator for up to 3 days.

Tuna and Corn Casserole - Gluten, Dairy, Nut Free

      A casserole is one of my favorite go to dishes. What's not to love?  It requires little prep time, basically cooks by itself and most importantly, always a crowd best-seller.  

        After I learned about my children's food allergies, making casseroles was quite a challenge.  As you may know or learned by now, most of the traditional soups used in casseroles are not gluten free. Not to mention loaded with preservatives and sodium.

        So, when I had the chance to try Dole's Garden Soup varieties at the GFAF Expo in NJ, I didn't waste any time.  I reached out to them so that I can use and review their new products.



      Dole Garden Soups is the latest addition to Dole's growing packaged foods.  It comes in five varieties namely Carrot Ginger, Southwestern Black Bean and Corn, Roasted Garlic & Tomato Basil, Tomato Vegetable and Sweet Corn.  The two later varieties are my favorite.  Aside from being creamy and delicious, these soups are:
         * Gluten Free
         * Non GMO
         * Preservative Free
         * Low Fat
         * No Cholesterol 
         * Ready to Eat 
         * Top 8 Allergen Friendly (except for the Roasted Garlic &Tomato Basil which contains milk)

         It is also very versatile.  Did you know that you can use it as gravy or sauce too?  Yes, it's an excellent ingredient for casseroles as well.  The Sweet Corn Soup is my secret ingredient to this really easy, yummy and kid friendly Tuna and Corn Casserole dish.  Not only is it allergy friendly, this version is really healthy too.

Ingredients:

1 (26 oz) box Dole Garden Soup Sweet Corn
4 cans (about 3 cups) canned tuna in water, drained
1/2 cup green peas
1/2 cup corn kernels
3 tsp. sea salt
1 tsp. dried oregano
1 tsp. ground black pepper
1 tsp. paprika
2 cups water
1 lb. gluten free macaroni (uncooked)
3 Tbs. chopped fresh parsley
1 Tbs. lemon zest
1 tsp. oil (canola, avocado or sunflower oil)


1. Preheat oven to 375 degrees F.
2. Grease a 13 x 9 casserole dish with oil.
3. Put all the ingredients except for the lemon zest and parsley in a big bowl.  Mix well.
4. Transfer the mixture to the prepared dish.
5. Top with the lemon zest and parsley.
6. Cover with foil and bake for 35- 40 minutes.
7. Serve hot.

TheFrugalistaMOM's Food Allergy Coupons Giveaway

Food Allergy Friendly Meals made Easy by Ian's Natural

         "My kid was recently diagnosed with food allergies.  Does that mean I have to cook everything from scratch?"  This is one of the most common messages I get in my inbox.  More often than not, it will be followed by statements of frustration, confusion and even guilt.  The typical mom guilt that implies "I'm not doing enough for my child." sort of thing. 

         Guess what my dear moms and dads?  I too, don't make everything from scratch.  Even if I blog about food, create recipes and spend most of my waking hours cooking, I confess I still rely on the help of ready to eat foods to keep my growing kids fed.  It's just that the more I cook, the more the eat. Can you relate? 

        Anyway, since most take out is no longer an option, I try to stock up on frozen packaged foods which can be easily reheated.  One of my family's favorites is Ian's Natural Foods

          Here are some of my kids' favorite gluten, dairy, soy, egg, nut and peanut free treats.  As I have mentioned here on the blog before, all my food allergy kids have eaten the regular version of these foods before they were properly diagnosed.  So when they say that it is close to the "real thing", it really is.  



Smokin' Sweet BBQ Chicken Nuggets 
      Seasoned with garlic, onion, tomato and jalapeno powders, these chicken nuggets are loaded in flavor.  No ketchup or sauce needed.  All four of my kids gave it a thumbs up. The two younger ones though found it a little spicy for their taste. 


Breaded Popcorn Turkey Corn Dogs
         The kids gave these a double four thumbs up! Though it's not the traditional corn dogs they had prior to their food allergy findings, these were still a big hit.  It has the right amount of crunchy coating which is close to that of a really good tempura.  The hotdog stayed moist, soft and the best part not too salty.  




Mac & No Cheese
        What more can I say? Finally!  At first the kids were a bit hesitant to try it because of the name on the box.  If there's no cheese then what will it taste like?  

       Though they've tested quite a number of vegan cheeses, most of which, they hate, I was able to convince them to take a bite.  Guess what?  They liked it! It's not salty but is quite creamy and tasty. The noodles were a little on the soft side though.  





Supreme French Bread Pizza
       My lifesaver!  As you all know, pizza parties are still a norm in many schools.  If there's going to be a party the next day, I would stay up late, preparing for a pizza dough and wake up really early the next morning to make the pie.  These are not only convenient but really yummy.  Even my toughest bread/pizza critique gave it a double thumbs up.  Love that it is already portioned and can be ready in 20 minutes.

Easy Italian Sausage and Vegetable Fried Rice

       Fried rice is a staple in our monthly menu.  Not only is it really easy to prepare.  It's also very budget friendly.  In fact, my kids always look forward for the "special fried rice" day.  Why?  Well, let's just say that the end product never disappoints and is unpredictably yummy.   

      So when Harvester Farms asked me to create something quick and child friendly with their freeze dried vegetables, I didn't think twice.  I knew right away that this one pot dish will fit the bill. 

      Before I share the recipe for my almost "gourmet" kid approved rice dish, I would like to tell you a little bit more about Harvester Farms freeze dried food.  They had sent me a can of sweet corn and green peas to try and experiment on.


          
        Conveniently called Emergency Food Supply, these freeze dried fruits and vegetables from Brothers All Natural are 100% natural and do not contain any preservatives or additives.  In fact, each product has a shelf life of 25 years which makes it perfect for emergency preparedness. Where were you during Hurricane Sandy?

        Anyway, I think wouldn't have to wait that long to enjoy these.  The fruits and veggies are actually ready to eat after all.  Straight out of the can, the corn and green peas are excellent snacks. Since it doesn't contain any extra oil, salt or sugar, I find it an excellent alternative to chips.  The crunchy texture and mild flavor makes it really addictive too. 

          Cooking with these freeze dried vegetables is quite easy too.  Just let it soak in hot water, broth or soup and it is ready to go in minutes.  No need to defrost or rinse.  It is a big help to have on hand especially if we want to have more vegetables on our diet. 

         Now, back to our featured recipe. The secret to this stir fried rice is the proper browning of the sausage.  The toasted sausage bits give the rice a unique texture and flavor.   Almost like bacon but with a hint of Italian spices. The corn and peas add some sweetness to this savory concoction.  Easy to make yet complex in flavor. 

           Who knew something gourmet can come out of leftovers?  Just don't tell your friends about it.

Ingredients:

1 Tbs. bacon grease or olive oil
2 pcs. Italian Sausage (removed from casing)
1/3 cup Harvester Farms corn
1/3 cup Harvester Farms peas
1 1/2 cup hot water
1/3 cup chopped onions
1/2 tsp. garlic powder
1 tsp. sea salt
6 cups cooked rice (leftovers worked perfectly well)
2 Tbs. chopped fresh parsley

1. In a medium sized bowl, soak the corn and peas in hot water.  Let it stand for at least 20 minutes before using.
2. Remove the sausages from its casing and crumble.
3. In a large saute pan or work, brown the sausage in oil. This takes approximately 7- 10 minutes.
4. Once the meat is nicely golden brown, add the onions and cook until translucent.
5. Add the rice and mix well.  Make sure there are no big lumps.
6. Season with salt and garlic powder.
7. Drain the corn and peas.  Add to the rice.
8. Stir fry the rice mixture for about 8-10 minutes or until it is heated all the way through.
9. Turn off heat.  Add the chopped parsley and mix.
10. Serve hot.

Product Review: Frontier Soups

        As the cold weather starts to kick in (We just hit the 30's earlier here in NJ), I'm sure you and your family are also craving for a nice big bowl of soup to warm up. There's something so comforting in it that can make any tough day better right? 

        Though I do have quite a collection of well loved soup recipes here, I can't deny that I do stock up on instant soups as well.  Yes, you read that clearly. This food allergy mom does not make everything from scratch.  So, when I was contacted by Moms Meet to review this unique line of products from Frontier Soups, I agreed without a doubt.  



        Above are the 6 varieties of the Frontier Soups in Minutes mixes.  With the exception of the Little House Alphabet Soup, all are gluten free, no added salt, preservatives and MSG.  In fact, they offer 28 varieties that are certified by the Celiac Spruce Association. A big plus for me. The rice and corn used in the mixes are also certified non GMO.  Another thumbs up.  

          Of the 6 varieties, our family tried, the Chicken Noodle is hands down the kids' favorite.  I like it was ready in 30 minutes.  That included the boiling of the chicken broth and heating up the leftover cooked chicken strips.  Oh did I mention that each package has 4-5 servings?  That's enough for the hungry kiddos.  



      Above is my version of the Red Pepper Corn Chowder.  The package suggested to add heavy cream.  Since we are dairy free at home, I decided to use a can of coconut milk.  The end result was amazing.  Coconut and corn goes well together after all.  It reminded me of my favorite Thai Coconut Soup.   The best part, this was ready in 30 minutes.  



         
          Here's my version of the Kale and Quinoa Soup.  The instructions asked for cooked butternut squash, tomatoes and chicken broth.  Since I don't have fresh tomatoes on hand, I decided to use a few pieces of sun dried tomatoes instead.  With the addition of a little bit of salt, the soup was perfect.

Top 8 Food Allergy Friendly Treats to Give Out this Halloween

      Are you ready for Halloween?  Whether you are a food allergy mom or not, I'm sure you will agree with me that the next few days will keep us busy.  From costumes to decorations and food, October 31st is exciting for the young and young at heart.

       Even food allergies haven't stopped my kids from having fun.  Yes, we also go Trick or Treating.  With a little twist though.  You can see how we do it here.
       
        Though there are so many candies to choose from, it is quite a challenge to find something that is free of the Top 8 allergens (wheat/gluten, dairy, egg, soy, tree nuts, peanuts, fish and shellfish). I think the last two are easier to avoid. Anyway, here's our family's top pick.
        
       




1. Yum Earth Organics
          This brand has individually wrapped lollipops, candy drops and even gummies. Aside from being free of the top 8 allergens, their products are also do not contain artificial flavors and colors. It's also organic.



2. Dum Dums
             A childhood favorite.  Who knew these are food allergy friendly as well?  If you have a soy allergy, please check out their disclosure. (see the Saf T Pops description below)



3. Enjoy Life Decadent Bars
         These bars are a real treat!  Not only for the kids but for the grown ups as well.  If you're the type who gives the regular size candy bars, these are way better.  






4. Surf Sweets
        Who doesn't like Jelly beans and sour gummies? These are also organic, without corn syrup and vegan.  



5. Saf-T-Pops
            Also from the company that makes Dum Dums, these lollipops have a unique handle that makes it friendly to younger children.  Though it is labelled Top 8 allergen free, the company website declares that  "the product may contain traces amount of soy oil, a processing aid in making candy. The soy oil has been refined, bleached and deodorized, a process that removes the protein that can cause an allergic reaction. But individual sensitivities vary, however, we have chosen to list soy oil."

     


6. Smarties
           Another all time favorite candy that's also food allergy friendly.  Their factory is also free of the top 8 common allergens. Since the company also sells their products to other re-baggers, their website says that "As consumers, we should check the UPC number on the packaging to be sure that the candy we are buying are not at risk for cross contamination.  Specifically, we should look packages with a UPC that starts with "0 11206" to make sure that it was packaged in their manufacturing facility.






7. Tasty Brand Organic Fruit Snacks
         I found a big box of these at Costco.  It's also vegan (doesn't use gelatin) and made without artificial colors and flavors as well. 


8. Home Free Cookies
             Made in a dedicated tree nut, wheat, dairy, egg, peanut and gluten free facility.  While some cookies such as mini vanilla, mini double chocolate, big oatmeal and the new gluten free large chocolate chip are soy free, their other varieties contain soy lecithin.

Easy Pizza Recipe - Gluten, Egg, Soy, Dairy and Nut Free

      Oh Pizza!  What would the world be without you?  This simple yet well loved concoction of dough, sauce and cheese has become a staple in almost every children's parties and school activities.  

      I can still remember my kids' reaction when I first told them about their food allergies. "No wheat and dairy!  That means we can't have pizza anymore?" "What will happen if there are parties?"

       Trying not to be defeated, I promised my children that we will make our own. I told them that I will look for recipes and they have to tell me which one is the best.  That conversation was about four years ago.  After countless testings and experiments, we were finally able to agree which one will be our favorite and reliable pizza recipe.

       For starters, making your own pizza isn't complicated at all.  After all, a pizza is just composed of these:
     
1.The Crust

     If you ask me what is the most important ingredient in a pizza, my answer will be hands down the Crust.  Whether you like it thin and crispy, thick and chewy, nothing turns me and my kids off a pie than a soggy or teeth breaking crust.  

    Over the years, I've tried quite a number of gluten free pizza dough mixes and even tried making some from scratch from the recipes I've seen online. Though my kids were happy to eat whatever I make, some crusts came out cracker like or worse, slimy in the middle.  Finally, we had our favorite which is King Arthur's Gluten Free Bread and Pizza mix.  Just follow the instructions on the side of the box to the tee.

      Here's the list of ingredients I used:
      1 box King Arthur Gluten Free Bread & Pizza Crust Mix
      1 1/4 cups lukewarm water
      4 Tbs. olive oil + additional 4 Tbs. of olive oil for pans and drizzle
      3 Tbs. ground flax seed
      9 Tbs. hot water

    Since we can't have eggs (the ingredient required on the box), I use flax goo (flax seed and water mentioned above) as the substitute. That's the brown flecks on the picture.  I like using flax because it adds extra protein and nutrients to my dough as well.

      Preparing the dough usually takes about a full hour.  That includes the proofing time. The good news is that,  once the crust was pre-baked (the first baking before you add the toppings), it can be frozen for future use.  Oh before I forget, one box of King Arthur's GF Pizza mix will give you enough for two thin pie crusts.


         Here's what the dough looks like after mixing.  It puffs up a bit after the resting period.     



2. The Sauce

        This is one of the easiest part.  I don't need to complicate things by looking for a gluten, soy, dairy, egg and nut free pizza sauce.  Your favorite Marinara sauce works well.  I often have homemade ones in the freezer but I also stock up.  Our go to brands are Wegman's Organic Marinara and Simply Nature from Aldi's.  

3. The Cheese

         One of the trickiest as nothing beats the flavor of the regular dairy ones.  After so much trials and errors, I found out that the Daiya one works best.  To achieve that complex flavor, I would use  three varieties.  Usually, it's the Mozzarella, Jack and Cheddar.  A little goes a long way so there's no need to panic and finish 3 packages for 1 or 2 pies.  




4. The Toppings

      From grilled chicken to canned pineapples, our choices for toppings are endless. If we are having pizza at home, we tend to get more creative.  Oftentimes, we use all the leftovers in the fridge.  For school parties, we usually stick to the basics.  Some of the kids' favorite includes Applegate Farms Salami or Pepperoni and Wegman's Organic Turkey or Ham. 

        
        So, that's my easy recipe.  As long as you got the pantry ingredients and the pre-baked crust on hand, whipping up a pizza for a party or school activity is a breeze.  I hope you will find this handy as the kids go back to school.

Asian Style Ratatouille Recipe using World Foods Fusion of Taste Sauces

    Our family loves trying ethnic food.  Before the children were diagnosed with food allergies, Sundays usually meant food adventure. We would go to church early at 8 in the morning so that we can drive around and look for an usual restaurant. The kids grew up trying new cuisine --- Indian, Chinese, Thai, Vietnamese, Afgan, Greek, Italian, Polish etc.  As long as the food tastes good, they are happy.  

     After we found out that food allergies are to blame for their constant coughing, asthma attacks, eczema and stomach problems, our food trips almost stopped.  Yes, we still get to eat out. However, it became very limited.  Often times, just once a month and each restaurant must be carefully scrutinized before we go.     

     Since most of our meals are now home cooked, I try my best to make it more exciting by preparing international themed dishes.  I confess, I now have an tremendous obsession with spices, herbs and even flours that my kids now call our kitchen, The Lab. 


     Anyway, cooking from scratch has become a way of life for me.  I admit, it is a tedious process but it leaves me no choice because it is quite difficult to find packaged seasonings or sauces that would be go with my family's multiple food allergies. Then recently, as a Moms Meet Ambassador, I was asked to try WorldFoods Sauces and Marinades.

For those who like it on the hotter side like me, a pinch of cayenne pepper should do the trick.  They are nice to have on hand especially on days I need to whip up something fast.

    Anyway, here's a quick recipe inspired by my children's current DVD obsession - Disney's Ratatouille.  This simple and easy dish is made with just summer vegetables and World Foods Thai Coconut Galangal Stir Fry Sauce.

Ingredients:

2 Tbs. canola oil
1 Tbs. minced garlic
1/3 cup chopped onions
1 cup chopped tomatoes
1/2 cup chopped red bell pepper
3 cups chopped zucchini
3 cups chopped yellow squash
2 cups chopped eggplant
1 12 oz. bottle World Foods Thai Coconut Galangal Stir Fry Sauce
1 tsp. sea salt
1 Tbs. chopped fresh parsley

1. In a big skillet, heat oil.
2. Saute the onions, garlic and tomatoes for 4 minutes.
3. Add the red bell pepper, yellow squash, zucchini and eggplant.  Saute for 4 minutes.
4. Pour the Thai Coconut Galangal Sauce over the vegetables.  Mix well.  Bring to a boil.
5. Season with 1/2 a tsp. of salt. Taste to make sure you have enough salt.  Depending on how much water the vegetables have, you might need to add the remaining 1/2 tsp of salt.
6. Simmer for 5 minutes or until the texture of the vegetables is to your liking.
7. Turn of heat and add the chopped parsley.
8. Serve hot with steamed rice or quinoa.
9. Enjoy!

Gluten Free Banana, Cinnamon and Oat Muffins

     I can't believe the back to school craze is already in full swing. Three more weeks and another routine will come about.  What's the biggest change? My beloved Child #4, my baby, is going to Kindergarten this year! Yup, all four children will be out of the house.  Finally!

   Before I get too emotional, I would like to share with you the kids' all time favorite Banana, Cinnamon and Oat Muffins.  This recipe has gone through several ingredient changes until we, as a family, decided on the best one. Don't be afraid of the multiple steps.  The extra dishes are totally worth it.

    These muffins are are moist, light and really healthy. The flax seed and milk are not only rich in protein but omega 3's as well.  Sorghum is not only gluten free, it is also an excellent source of fiber, thiamine, niacin, riboflavin and trace minerals like iron, phosphorus and potassium. Convinced already?

   Also, by keeping the sugar content as low as possible and relying on the sweetness of the bananas, I was able to make this a delicious breakfast treat.  It's portable and a nice addition to packed lunches and after school snacks.  Top it with some frosting, powdered sugar or melted chocolate and you'll have a better for you, food allergy safe cupcakes. Sounds good?

  The recipe yields about 18 standard sized muffins which stay good for 2-3 days at room temperature.  I'm sure you can easily freeze some for future snacks.  In my household though, a batch just lasts for a day.  That's how much they love it.

Ingredients:

1 cup sorghum flour
1/2 cup oat flour (gluten free of course)
1/4 cup tapioca starch
1/3 cup potato starch
1 Tbs. baking powder
1/2 tsp. baking soda
2 tsp. ground cinnamon
1 tsp. ground nutmeg
1/2 tsp. sea salt (fine)
1/2 cup organic cane juice (sugar)
1/4 cup avocado oil (you can also use canola or sunflower oil)
2 Tbs. ground flax seed
6 Tbs. lukewarm water
1 cup mashed bananas (over ripe ones are the best)
1/2 cup flax milk (or any dairy or non dairy milk of your choice)
1 tsp. apple cider vinegar

1. Preheat oven to 375.  Line muffin tins with paper cups or silicone muffin cups.
2. In a small bowl, combine the flax seed and water.  Let is sit for at least 5 minutes before using.
3. Except for the sugar, put all the dry ingredients in a medium sized bowl and whisk until thoroughly mixed.  Set aside.
4. Add the vinegar to the milk and let is stand for 3 minutes to make a non dairy buttermilk.
5. In a big bowl or the bowl of a mixer, cream the oil, sugar and flax goo.
6. With the mixer running on low, alternately add the dry ingredients and non dairy buttermilk.
7. Add the bananas and mix for about 1 minute.
8. Fill prepared muffin tips with batter. Make sure to leave about 1/2 inch space on top.
9. Bake for 10 minutes.  Then reduce the oven temperature to 350 degrees and bake for 8 to 10 minutes. It is ready when a toothpick inserted in the middle of the muffin comes out clean.
10. Remove from muffin tins and cool on a baking rack.
11. Enjoy!

Feel Good Balsamic Chicken Skewers

   It's been 11 years since I became a mother. That's over a decade of obsessing over my children's clothes, manners, school work, feelings, schedules, parties and the list goes on. Honestly, I can't even recall how many books, e-books, guides, and even blogs I've read just to make sure that I'm on top of our family's activities.  It even came to a point wherein I gave each child his/her designated pen color on the calendar so that I will not miss anything.  OCD alert!

    Then, once in a while, no matter how organized and effective our systems can be, there will be occasions when we just "slip up".  Whether your child has food allergies or not, those rare incidents often leave a tremendous mark in our conscience.  An instant self nomination to the "Worst Mother of the Year Award." 

     My latest nomination happened just before the school ended, I mistakenly thought that Child #3 doesn't need to bring lunch for school anymore.  Since it was the start of the week long early dismissal days, I only sent a package of his favorite seaweed snack and a handful of grapes.  

   "What can possibly go wrong? It was only a Field day and  he will be out at 1 pm."   

    With less than an hour before dismissal, I received a call from the school.  The secretary told me that I need to pick up my son because he has crying inconsolably and it was after the PTO provided the whole school with pizza for lunch.  Panic suddenly crept in.  I immediately asked her if the nurse knew about it and if they administered an Epi-pen shot.  What a huge relief when she told me, my son didn't eat the pizza and in fact, he was not given any at all.   

    When I arrived in school, the principal and his teacher told me about the lunch room incident and my son's refusal to talk to anybody.  At that time, he was already calm inside the classroom and has even asked his teacher if he could wait until dismissal to go home.  A request she gladly approved. 

     On our way to the car, I asked his side of the story.  Tears flowed right away and he told me he was really hungry and there was no food to eat.  He knows he can't have the free pizza and he's only allowed food from his lunch box. It was not about the pizza, it was the fact that he has no food for lunch because he ate all of it during snack time.  He said that he doesn't want to tell them (the teachers and staff) that there's nothing left in his lunch box.   When I asked him why he didn't call me, (our house is less than 1/2 a mile from school and I'm home that day), he said he was really sad to talk.  Heart breaking enough?

    I don't know what else to do to comfort him than promise him that when we get home, he'll have his favorite chicken BBQ with Herbed Sweet Corn. Thank God, I have these marinating for days in the fridge! Within a few minutes, he happily ate his late lunch with a big smile.  Yes! I was forgiven too.  

     This simple and easy to prepare dish is not only comforting but a real crowd pleaser. The trick is it to let it marinade for a long time. It can be stored in the fridge for 3-4 days or longer in the freezer.  It can be cooked on the grill, in the oven and even on the stove top.  

     The combination of sweet, sour, salty and spice is very child friendly. Since the meat is flavored without a sticky and messy sauce, these skewers are perfect for potlucks and even kids' lunch boxes.  For a more grown up version, add a pinch or more of powdered cayenne pepper.  You can also serve it with your favorite dipping sauce.  Child #1 likes it with bottled BBQ sauce on the side while Child #2 likes it with ketchup.

Ingredients:

1 1/2 lbs. boneless, skinless chicken thighs (or chicken breast)
1 1/2 cup balsamic vinegar
1/2 tsp. ground black pepper
2 tsp. garlic powder
2 tsp. sea salt
1/4 tsp. chili powder

1. Cut the chicken thighs in half.  About 2 inch squares.
2. In a glass container with lid, whisk the vinegar, black pepper, chili powder, sea salt and garlic powder until well combined.
3. Add the chicken pieces and make sure it is well covered with the seasonings.
4. Cover and marinate at least 24 hours in the refrigerator.
5. Thread chicken onto skewers.
6. Lightly oil the grill plate and cook for about 7-9 minutes on each side or until the chicken is cooked through.
    If using the oven, broil for about 8-10 minutes on each side.
    Stove top, lightly grease a cast iron skillet or grill pan.  Place the chicken skewers when the pan is starts to smoke.  Cook for 6-9 minutes on each side or until the juices run clear.
