Healthy Gluten Free Snacking this Summer with NoGii

     For years, I have seen and heard NoGii gluten free snacks. Though the brand was a staple at gluten free expos I frequent, I never actually had the chance to try the products. So, when I was contacted to sample and review their products thru Moms Meet, I didn't have to think twice. 

    When I received the box sent by Elisabeth Hasselbeck and company, I was astonished! I couldn't believe how generous this company is. 


    Then something hit me. Are they trying to bribe me with quantity because they lack quality? I suddenly became a bit skeptic. Can you blame me? After all, a good tasting gluten free bar is indeed hard to find in spite of the choices available. 

     After sorting which products are for my own consumption only (contains ingredients that aren't safe for most of the kids), I decided on tasting the Chocolate Caramel D' Lites. These 1 oz bars were an instant hit with me and Child#1 (who outgrew her peanut allergy). It was really delicious and full of flavor. This little snack has it all - sweet, salty, crunchy, gooey and yes, filling! With just 120 calories and 7 grams of protein, it is definitely a healthy treat.

     Next, my daughter and I tried the Peanut Butter & Chocolate Bar. After learning how filling the D'Lites bar is, we figured out that this bar will be perfect as an in between activities meal. With 20 grams of protein per bar, (now I know why it's called High Protein) this bar has become a regular in my summer bag.  Just like it's smaller counter part, this bar is really tasty and satisfying. Shhh... even my husband (who's a picky gluten free bar eater) is a big fan. NoGii is now a part of his lunch bag too.

Organic Veri Soda Giveaway

     It's been a while since I've hosted a giveaway and I'm sure you are missing it too. Right? Well, today I have an exciting news. Our friends from Moms Meet and Veri Organic Soda have graciously sponsored a special treat just for you my TFMFriends.  

   Before I give you the details for the giveaway, I have a confession to make. While I was able to readily remove all the foods that my children were allergic to from our home, up to now, I still have a tough time giving up soda. While this carbonated drink is not really a staple in our diet, (We are the unlimited water family), there are just some meals that doesn't feel complete without it. 

    For instance, I always enjoy an icy root beer soda to go along my burger and fries. A cola tastes great with Crispy Pata (Deep fried marinated pork) or Lechon Kawali (Fried pork chunks). While Ginger ale is perfect with Chinese food.  

     I admit, my soda and food parings is my "dirty" little secret. I'm not proud to share these delicious indulgences because I'm also a big fan of healthy eating. Soda is on the contrary is the epitome of true unhealthy food. As most healthy advocates will say, enjoying the later just overthrows my good intentions.  

    This got me thinking.  Why does this bubbly treat has such a bad reputation? Then, out of the blue, I was contacted by Moms Meet to review this new brand of soda called Veri Soda.   

    At first, I was quite confused with the product. The terms "soda" and "organic" in one line doesn't seem to go hand in hand right? Soda depicts bad for the health.  While "organic" equates good for the body.  



    After I visited Veri Soda's official website, the questions lurking in my brain were answered.  Soda got its bad reputation from the ingredients used to make it.  A typical soft drink contains high fructose corn syrup, caffeine and phosphoric acid.  It is also loaded with chemical preservatives.  

    Veri Soda's mission is to make a different kind of soda with no artificial colors, aromas, flavoring or even sweeteners. They were even able to eliminate 65% of the calories without sacrificing the taste. How did they do it? By simply using the best organic ingredients which is easily seen in each can. These includes organic cane sugar, stevia extract, lemons, ginger and cinnamon.  The end result is a delicious treat without the guilt.  

     Aside from being a USDA-NOP organic certified soda, Veri Soda is caffeine free, lightly carbonated which allows us to taste the actual flavor. There's no harsh sweetness or lingering after taste like most zero calorie sodas.  It has a "low glycemic load" meaning you won't have a sugar spike or the dreaded crash after. The best part, a 12 oz can only has 60 calories! 

     Sounds good so far?  Well, for any soda drinker, the true test is the taste. There are 4 flavors of Veri Soda and our family was able to taste all of it.  Here's our consensus. In general, we found out that Veri Soda is not overly sweet. Yes, there's a hint of sweetness but not the type that will keep you thirsty and craving for more.  Surprisingly, it indeed is good both cold and at room temperature. Though I still prefer it icy cold. 

    The orange flavor was the favorite of my kids. It tastes like orange juice but with the bubbles. Since it is not extremely sweet, I didn't need to dilute it in ice.  Yes! I'm that mom.  The lemon lime I have to say is the farthest from the soda we are used to. It's not bad tasting. In fact, it is like lemonade with the bubbly.  As for the cola flavor, the die hard fans of the two leading cola brands will definitely taste the difference. It's not the same as any of the two. However, I love it.  To better describe the taste, it is close to that of root beer.  Since I'm a fan of it, then it captured my heart. Lastly, is the ginger ale. This is my favorite flavor. I can taste the ginger but in a sweet and refreshing way.  It is tasty palate cleanser especially after a greasy meal.

4 Reasons to Try Organic India Moringa

    One of the things I enjoy as a Moms Meet blogger is that I am able to try new and healthy products which I wouldn't notice otherwise. A perfect example for this is Organic India Moringa.  

    Before this review, I have to say, I thought I have no clue what this nutritional supplement is.       As I read more about moringa or malunggay, it brought back so many memories. I remembered my grandma forcing me to eat these leaves a few times a week especially when my iron and blood count are low. (I have Thalassemia.) She also made me drink tea made with these leaves whenever I have stomach aches. Most importantly, it also reminded me of my first job in my grandma's kitchen which is to separate the leaves from the stem.  

        For generations, my family has used moringa and I have to admit, I did benefit from it. But don't just take my word for it.    



      I have gathered some information that will let you think about adding Organic India Moringa in your diet today.

1. Certifications and Labeling.
    As most of us allergy people know, the US FDA has a long way to go when it comes to efficient labeling and regulations. When it comes to dietary supplements for instance, manufacturers must register their facilities with FDA but they are not required to get FDA approval before producing or selling.

Making Life a Little Sweeter without the Guilt

      One of my goals for this year is to use less sugar. I have to say, it is quite a challenge because I do have a sweet tooth.  That's why when I was asked to try Organic SweetLeaf Stevia by Moms Meet, I immediately grabbed the opportunity.

     Above is the gift pack I received from the makers of SweetLeaf Organic Stevia.  Though I was really curious about on how the sugar alternative will taste, I have to admit, the Sweet Drops stole the show. Packaged in a familiar medicine bottle complete with a rubber dropper, the SweetDrops made me a little hesitant to actually try it. (Well, it just brings bad memories.) 

    Anyway, since our rule in this house is try something once before saying No, (unless of course it contains their allergens),  I kept on open mind.  Now, here's something important to know most especially by us food allergy people.  Since the labels of SweetLeaf products don't specify for any allergens or warnings, I decided to contact them before writing this post.  Here's their response on my inquiry.

Our ingredients include purified water, organic stevia extract, and natural flavors which are plant based, which means that we use a combination of herbs, fruits, vegetables, and essences. Sweet Drops™ contain no MSG or other products like it. Our liquids are also vegan and gluten free, meaning they contain no corn, wheat, barley or rye. We do not use GMO products. Our equipment may process different things but it is thoroughly cleaned between each product. Our product does not contain any soy or rice, and stevia extract used for the preparation of SweetDrops has been obtained with water extraction only.
I hope this information helps!

       As of this posting, I still haven't had a specific response on the peanuts and tree nuts (aside from Hazelnuts).  I'll keep you posted once the information is available.

      However, our family did try the Pumpkin Spice and the Berry Flavors (about 8 times already) and so far, all four of the kiddos didn't have any reactions. 

      For testing, I used our favorite recipe for Pumpkin Oat Muffins.  Instead of the adding 1 cup of sugar as the recipe requires, I cut it in half and included 8 packet of Sweet Leaf Organic Stevia. Then, I added about 10 drops of the Pumpkin Spice Sweet Drops to the batter and baked it in a loaf pan at 350 F for about 40 minutes (or until a toothpick inserted in the middle comes out almost clean). The result is a delicious Pumpkin Spiced Bread.   

  

       One of the reasons why I enjoy using Sweet Drops is that it not overly sweet like honey or agave. It's not even thick at all.  In fact, it is more of like the extracts we use for baking, only colorless, alcohol free and full of flavor. That's when  I realize the importance of the dropper. It allowed me to precisely add how much I need. Surprisingly,  a little of this really goes a long way.  

       Aside from adding extra flavor to baked goods, the SweetLeaf Drops works well coffee, tea and yes plain old water.  Even Child #3, (the pickiest one) agrees.  It provides so much flavor without the added calories, after taste and side effects.  Personally, I get headaches if I consume products with aspartame or other artificial sugar substitutes.  

       Now for the Organic SweetLeaf Stevia packets. After using it on hot liquids such as coffee and even tomato based sauces, I found out that it gives the added sweetness without any after taste - a challenge most sugar substitutes have. When used with cold liquids, it melts right away and is not bitter at all.  I've made sweet lemon tea with it a few times and I have to say, I can't tell the difference.

        If you are watching your sugar intake, SweetLeaf Organic Stevia products are really nice to have on hand.  It gives that sweetness we love and crave without the guilty feeling.

Harvestland Review and $5 Coupon Giveaway

      One of the most important outcome of my children's food allergies is our family's deeper awareness on what is in the food we eat.  During my elementary days, I remember being trained to eat a variety of foods specifically fruits, vegetables, meats/protein, grains and oil.  In order to be healthy, we should avoid processed foods and choose food which are closest to it's natural state.  

      When I learned that I'm expecting my first child, I tried to make sure I provide the healthiest possible for my child.  That included breastfeeding for more than one year exclusively, cooking more at home and even making my own baby food.  Call me crazy but I did that to all four children.  

      After the kids were properly diagnosed with food allergies.  I became more strict with their food.  This meant I have to read everything on the label and even call companies if some of the ingredients were not clear.  

      Can you imagine my horror when I found out that majority of the basics such as milk, vegetables and yes, fresh chicken, pork, turkey and beef were loaded with unnecessary additives like antibiotics, hormones, preservatives and pesticides?  Who knew that the "natural" foods we learned to be healthier are actually filled with toxic products? Even worse is the reality that we are buying and consuming products from sick animals.  Oh and don't get me started on the things going on for ground meat products.  

        Anyway, that's when I decided that no matter how I like bargains, I would be willing to pay an extra dollar or more on the quality of the products I'll buy.  What's the point of spending hours planning meals and home cooking if my ingredients aren't healthy to begin with? 

          That's why when I was contacted by Momsmeet to review Harvestland products, I was so thrilled.  


        Though Harvestland has a wide selection of precooked and processed (sausages, chicken patties), I decided to stick to their fresh raw chicken.  Why?  Well, I want to compare Harvestland to the brands that are cheaper.  For this review, I focused on my favorite whole chicken.  

           As a seasoned home cook, I noticed right away that the Harvestland chicken doesn't have a really thick fatty skin.  Yes, I'm one of those people who actually remove most (not all) of the chicken skin before cooking.  Sad to say, there were times when I felt that about 1/5 of the amount I paid for is being thrown away.  

           For the two whole chickens I have, I used one to make Indian Spiced Roasted Chicken and the other for Chicken Tinola.  One both recipes, I realized that each dish has produced lesser water or juices. That meant I was able to get more meat per weight.  Who wants to pay for extra water weight? 

          Was the a significant taste difference that my children can detect on those dishes?  Not really.  However, I'm glad they are actually eating not only a delicious meal but healthier as well --- no antibiotics, pesticides, steroids, hormones.  Don't just take my word for it.  Harvestland is USDA Process Verified.

Sweeter and Healthier Desserts with Monk Fruit in the Raw

       We're on the last stretch of 2014.  You know what that means right? The holidays are here and let the baking marathon begin. 

     For those who have been extra good about their weight loss and management the whole year  (certainly not me!), this time of the year is said to be the most challenging. Though most studies mention that the average weight gain during this period is just one pound (really?!), my weighing scale often disagrees and shows 5 -10 lbs every year.    

         Anyway, if you also have a sweet tooth like me, I'm sure you will like this new sugar alternative called Monk Fruit in the Raw.  I've seen this product in the store shelves a while ago yet never really have the courage to try it. When Moms Meet asked me to review it, I became really excited.
       


     
        For starters, Monk fruit in the raw is a wholesome, zero calorie sweetener made from real monk fruit.  What exactly is a monk fruit you may ask?  Well, it is a vine ripened fruit that is native to Asia. This fruit is said to be twice as sweet as the regular table sugar.  Also known as luo gan huo, this fruit was believed to be first harvested during the 13th century by Arhats or "Enlightened Ones" which translates to Monks in English.  

       Monk fruit in the Raw is made from the extract of monk fruit blended with other sweeteners such as dextrose.  It is naturally vegan, kosher and gluten free.  It also doesn't contain any added table sugar, sugar alcohols or molasses.  

The Test

       For this review, I received a baker's bag of Monk Fruit in the Raw and a box of Monk fruit in the Raw Packets to try. 

       Honestly, I am not a big fan of sugar alternatives because most brands have a strong after taste. This after taste not makes tea or other drinks very bitter, it also leaves a soapy or chemical flavor. 

       My experience with Monk Fruit in the Raw however, was surprisingly pleasing.   It tasted so close to real sugar.  If not for the finer texture, I won't be able to distinguish it from the real thing. Regarding my issue with aftertaste, Monk fruit in the Raw had the slightest hint of bitterness.  With coffee and black tea, it is almost undetectable.  

      As most of you have already figured out, I bake lot at home.  To make my baked goods healthier, I often substitute half of the required amount of oil with fruit purees.  I never dared to use sugar alternatives because of the numerous horror stories I've heard and read.  For this review, I challenged myself to actually use Monk Fruit in the Raw bakers bag to bake.  

        Since the makers recommended to replace just half of the required sugar, I followed.  I tried using it to make my Pumpkin Oat Muffins last Thanksgiving.  Though the end product didn't rise as high as the usual, the muffins still tasted really good.  The texture was also close to what we always had.  The best part is that, it didn't have any bitter aftertaste.  To my delight, none of the four kids detected any change in the recipe.  





       To sum up, I have to say that Monk in the Raw is one of the better sugar alternatives we currently have in the market.  It works really well on baked goods which people with diabetes would appreciate.  If you are watching your sugar intake, this product will be your friend.

Product Review: Frontier Soups

        As the cold weather starts to kick in (We just hit the 30's earlier here in NJ), I'm sure you and your family are also craving for a nice big bowl of soup to warm up. There's something so comforting in it that can make any tough day better right? 

        Though I do have quite a collection of well loved soup recipes here, I can't deny that I do stock up on instant soups as well.  Yes, you read that clearly. This food allergy mom does not make everything from scratch.  So, when I was contacted by Moms Meet to review this unique line of products from Frontier Soups, I agreed without a doubt.  



        Above are the 6 varieties of the Frontier Soups in Minutes mixes.  With the exception of the Little House Alphabet Soup, all are gluten free, no added salt, preservatives and MSG.  In fact, they offer 28 varieties that are certified by the Celiac Spruce Association. A big plus for me. The rice and corn used in the mixes are also certified non GMO.  Another thumbs up.  

          Of the 6 varieties, our family tried, the Chicken Noodle is hands down the kids' favorite.  I like it was ready in 30 minutes.  That included the boiling of the chicken broth and heating up the leftover cooked chicken strips.  Oh did I mention that each package has 4-5 servings?  That's enough for the hungry kiddos.  



      Above is my version of the Red Pepper Corn Chowder.  The package suggested to add heavy cream.  Since we are dairy free at home, I decided to use a can of coconut milk.  The end result was amazing.  Coconut and corn goes well together after all.  It reminded me of my favorite Thai Coconut Soup.   The best part, this was ready in 30 minutes.  



         
          Here's my version of the Kale and Quinoa Soup.  The instructions asked for cooked butternut squash, tomatoes and chicken broth.  Since I don't have fresh tomatoes on hand, I decided to use a few pieces of sun dried tomatoes instead.  With the addition of a little bit of salt, the soup was perfect.

Asian Style Ratatouille Recipe using World Foods Fusion of Taste Sauces

    Our family loves trying ethnic food.  Before the children were diagnosed with food allergies, Sundays usually meant food adventure. We would go to church early at 8 in the morning so that we can drive around and look for an usual restaurant. The kids grew up trying new cuisine --- Indian, Chinese, Thai, Vietnamese, Afgan, Greek, Italian, Polish etc.  As long as the food tastes good, they are happy.  

     After we found out that food allergies are to blame for their constant coughing, asthma attacks, eczema and stomach problems, our food trips almost stopped.  Yes, we still get to eat out. However, it became very limited.  Often times, just once a month and each restaurant must be carefully scrutinized before we go.     

     Since most of our meals are now home cooked, I try my best to make it more exciting by preparing international themed dishes.  I confess, I now have an tremendous obsession with spices, herbs and even flours that my kids now call our kitchen, The Lab. 


     Anyway, cooking from scratch has become a way of life for me.  I admit, it is a tedious process but it leaves me no choice because it is quite difficult to find packaged seasonings or sauces that would be go with my family's multiple food allergies. Then recently, as a Moms Meet Ambassador, I was asked to try WorldFoods Sauces and Marinades.

    After trying the 4 types of sauces they sent me to try, I have to say, these Asian style sauces are a blessing!  Not only are they allergy friendly, it makes regional food really easy and convenient. The flavors are very accurate too. (I'm an Asian remember?)  My kids love that the sauces and marinades are delicious and not too spicy like most restaurants have. For those who like it on the hotter side like me, a pinch of cayenne pepper should do the trick.  They are nice to have on hand especially on days I need to whip up something fast.

    Anyway, here's a quick recipe inspired by my children's current DVD obsession - Disney's Ratatouille.  This simple and easy dish is made with just summer vegetables and World Foods Thai Coconut Galangal Stir Fry Sauce.

Ingredients:

2 Tbs. canola oil
1 Tbs. minced garlic
1/3 cup chopped onions
1 cup chopped tomatoes
1/2 cup chopped red bell pepper
3 cups chopped zucchini
3 cups chopped yellow squash
2 cups chopped eggplant
1 12 oz. bottle World Foods Thai Coconut Galangal Stir Fry Sauce
1 tsp. sea salt
1 Tbs. chopped fresh parsley

1. In a big skillet, heat oil.
2. Saute the onions, garlic and tomatoes for 4 minutes.
3. Add the red bell pepper, yellow squash, zucchini and eggplant.  Saute for 4 minutes.
4. Pour the Thai Coconut Galangal Sauce over the vegetables.  Mix well.  Bring to a boil.
5. Season with 1/2 a tsp. of salt. Taste to make sure you have enough salt.  Depending on how much water the vegetables have, you might need to add the remaining 1/2 tsp of salt.
6. Simmer for 5 minutes or until the texture of the vegetables is to your liking.
7. Turn of heat and add the chopped parsley.
8. Serve hot with steamed rice or quinoa.
9. Enjoy!

It's here! #WOWSummit 2014
